
This dough was pretty wet and sticky, and it required "fast hands" for the kneading so it wouldn't stick to everything. After about 10 minutes of kneading, it started to come together. The pore size is about what I'd hoped for with hand kneading:

Anyway, I used a half cup or cooked potato pushed through a ricer. I put 1/4 cup in the poolish and 1/4 cup in the dough. This turned out to be one tasty bread, and it makes excellent toast.
